Beautiful Beets!

We harvest our first bunch of beets yesterday and they are SO sweet and delicious.  These are chioggia beets – recognizable by their “bullseye” pattern when you slice them in half.

Beet greens are a great addition to salads and are also wonderful in a stir-fry.  Beets can be cooked a variety of ways (including pickled for winter – an upcoming project!), but our favorite is to roast them.  Wash the beets and peel off the outer coating, then chop them into bite sized chunks.  Drizzle with olive oil, salt and pepper and roast in the oven at 325 degrees F for 15-20 minutes or until they are just soft enough to be pierced with a fork.  Buon Apetito!
