These Roasted Butternut Fries are SO simple to make and would be perfect with a toasty grilled cheese sandwich. Yum.
Butternut Squash Fries
1 medium butternut squash cut into long strips
1. Preheat oven to 425 degrees. Line a cookie sheet with foil or parchment paper and drizzle with olive oil. Arrange the butternut squash pieces in the sheet leaving some room in between.
2. Rub the squash with olive oil and sprinkle with salt. For a variation, try adding your favorite spices. Bake for 40-45 minutes (turning at least once) for soft sweet fries. Bake for 15-20 minutes (turning at least once) for firmer fries.
