And the forecast is for yet another GORGEOUS weekend at the farm!  Perfect weather for pumpkin picking, hayrides, exploring the corn maze, and taking cute baby pictures like this one. 🙂

These Roasted Butternut Fries are SO simple to make and would be perfect with a toasty grilled cheese sandwich.  Yum.

Butternut Squash Fries

Ingredients:

1 medium butternut squash cut into long strips
Olive oil
Kosher salt

Directions:

1. Preheat oven to 425 degrees. Line a cookie sheet with foil or parchment paper and drizzle with olive oil. Arrange the butternut squash pieces in the sheet leaving some room in between.
2. Rub the squash with olive oil and sprinkle with salt. For a variation, try adding your favorite spices. Bake for 40-45 minutes (turning at least once) for soft sweet fries. Bake for 15-20 minutes (turning at least once) for firmer fries.
