Recipe of the Day: Toasted Pumpkin Seeds

What’s the best part of pumpkin carving? Toasting the SEEDS! Pumpkin seeds are packed with nutrients.  They can be made with a variety of seasonings (spicy cayenne, sweet cinnamon and sugar, curry, etc), and added to a variety of dishes (to garnish salads, mix into granola, bake into granola bars, etc).  DO try this at home!

Toasted Pumpkin Seeds

Seeds from one pumpkin, pulp and strings removed
2 tablespoons vegetable oil
Salt, to taste (try garlic salt, if you’re adventurous)

  1. Spread clean seeds out to dry for 3 hours. Preheat oven to 350 F.
  2. Mix oil, salt, and seeds together and place them on a cookie sheet. Bake in the oven until golden brown (about 25 minutes) while stirring every 5 minutes.
