You Can’t Beat a Beet!

Freshly harvested beets at the Jones Family Farms Farmers’ Market

It’s the summer of the beet here at the farm, and today’s farmers’ market is featuring this garden favorite with our theme “You Can’t Stop the Beet!” Most people think of the classic deep red color when picturing a beet, but this vegetable actually comes in several different varieties. From the red and white striped fresh of the Chioggia beet to the carrot-colored root of the Golden beet there are many colors to choose from. The root of the beet plant can be cooked and added to summer salads, or roasted with potatoes as we did for our cooking demonstration today. The leaves of young plants make a great addition to salads or a stir fry too!
